This bold and herbal Campari sour is as deliciously balanced as it is pretty. You’ll love the sweet and juicy palate with citrusy fresh gin, slow-building bitterness, and irresistibly silky egg-white foam!

This is one of the most flavorful sour cocktails we’ve made! We don’t often mix Campari and gin, but the combination is pretty perfect.

The light, herbal botanical notes add a lovely freshness to the bold Campari. Shake it up with a hefty squeeze of lemon, the tiniest drop of simple syrup, and a silky egg white and you have a thirst-quenching (and beautiful!) summer cocktail.

how to make a campari sour:

  1. Combine everything in a cocktail shaker.
  2. Dry shake (no ice!) for 1 minute.
  3. Add ice and shake until chilled, about 20 seconds.
  4. Strain into a coupe and enjoy!

  • Play with the gin! You might be surprised how much the character of the gin influences the final drink. Some gins are dominated by notes of pine and juniper, while others are more citrusy, medicinal, or peppery. Each can add a fun new dimension to this cocktail.
    • We have a soft spot in our hearts for Hendricks, but Aviation gin is great and Plymouth gin is a classic.
  • Swap lime for the fresh lemon for a tarter, chalkier acid profile.
  • Serve it in a rocks glass over a large ice cube.
  • Enjoy it right away, while the foam is thick and fresh.
  • Garnish it with an orange twist, edible flowers, or a sprig of rosemary.

    Ingredients

    • 1 ½ oz gin
    • ¾ oz Campari
    • ¾ oz lemon juice
    • ¼ oz simple syrup
    • 2 dashes orange bitters
    • 1 egg white

    Instructions

    1. Combine gin, Campari, lemon juice, simple syrup, bitters, and egg white in a cocktail shaker (don’t add ice yet). Vigorously shake until mixture is very foamy, about 1 minute.
    2. Fill shaker with ice and shake another 20 seconds, or until well chilled.
    3. Strain into a chilled coupe. Serve.
