Earthy, funky, zesty and full of texture-- that’s what you can expect with this blackberry tequila spritzer. Sure, it looks like a total girly fruit bomb. What can I say, my husband’s the mixologist and he gravitates towards pink drinks.

But don’t let the color mislead you. This tequila spritzer is a complex cocktail that leads with citrusy agave notes and is offset by juicy blackberries and a strong kick of lime.

And don’t underestimate the flavor impact from that little red wine float. The grippy tannins add texture and make this blackberry spritzer all the more engaging. It works beautifully with the sharp lime.

And of course, the type of wine you choose will have a big influence on the final cocktail. An old world red will play off the tequila and give you a spritzer that’s extra earthy, mushroomy and savory. On the other hand, a Washington state merlot will enhance the soft, fruity blackberry notes and add a touch of sweetness to the cocktail. That’s the fun part about cocktails. The ingredients you pick have a big impact on the flavors of the final drink-- so make sure to use what you like!

  1. Combine fresh or frozen blackberries, sugar and water in a saucepan
  2. Gently simmer for 5 minutes, then mash up berries
  3. Steep for 15 minutes

  • Make sure to use a good tequila here. Sometimes the liquor you use for cocktails is relatively unimportant, but this blackberry spritzer is built around the flavors of tequila. If it’s a cheap and gross tequila, this will taste like a cheap and gross cocktail. 
  • If you like your drinks on the sweeter side, bump up the blackberry simple syrup to 2 oz because this is a deliciously tart cocktail.
  • Use a Coravin! This is the best way to get ½ oz of your favorite red wine out of the bottle without having to actually open it. The flexibility will change your life.

Ingredients

blackberry simple syrup

  • 2 cups blackberries
  • ½ cup sugar
  • ½ cup water

  • 2 oz blanco (silver) tequila 
  • 1 ½ oz blackberry syrup (recipe above)
  • 1 ½ oz fresh lime juice
  • 2 oz soda water
  • ½ oz red wine
  • 2- 3 fresh blackberries, for garnish

Instructions

  1. Combine blackberries, sugar and water in a small saucepan. Bring to a gentle simmer, stirring occasionally, and cook 3- 5 minutes until berries soften. Use a cocktail muddler or potato masher to mash up berries and cook another minute. Remove from heat and let cool 10- 15 minutes to let flavors steep. Strain syrup through a fine mesh sieve and discard solids.

  1. Combine tequila, blackberry syrup and lime juice in a cocktail shaker filled with ice. Shake until chilled, about 30 seconds. Strain drink into a highball glass filled with fresh ice. Top with soda water. 
  2. To float the red wine, gently pour wine over the back of a spoon held just over the drink’s surface. Garnish with fresh blackberries and enjoy immediately.

Notes

Blackberry syrup will keep for up to 2 weeks in the refrigerator.
