Get inspired with a basic recipe for burrata toast that you can take 4 ways, plus 20 more ideas for every season!

Creamy, milky burrata on crunchy toast is delicious on its own. Still, we love to elevate it with a few extra ingredients: fresh cherry tomatoes with a balsamic reduction, homemade basil pesto, crispy prosciutto with homemade hot honey and edible flowers, and sliced avocado with fresh herbs. You’re bound to find something you love!

Why I love it:

Recipes for burrata toast seem a little bit absurd. It’s toast and a few chunks of torn burrata. Why overcomplicate it?

I get that. But I also get that sometimes, a recipe is more than just directions for what to do. It’s inspiration. It’s ideas. It’s a springboard to get you started with what you have so you can create something delicious and memorable. 

That’s how I view this burrata toast collection. It's four completely different ways to take the ever-so-simple burrata toast.

Herby avocado, a fresh cherry tomato caprese-like toast, a sweet and salty prosciutto toast with hot honey, and a gorgeously simple pesto burrata toast. 

Riff off of these as much as you can! 

Upgrade the classic basil pesto to a cilantro pepita pesto. Add crunchy bacon and a fried egg for the fanciest burrata breakfast toast. Sometimes, I even use leftovers of this warm kale salad with pickled raisins and spoon it over burrata toast for an amazingly easy, delicious dinner.

Use what you have or what's in season. Swap the cherry tomatoes for thinly sliced cucumbers. Or even better— sub half the tomatoes for peaches, and get ready for your mind to blow on how great tomatoes, basil, and peaches are together. 

Burrata toast is the perfect place to experiment with flavor combinations that intrigue and intimidate you. Those mixes that might be great... or might be terrible. But you only find out if you try!

Like I said above, it feels silly to write a recipe for burrata toast. But it doesn’t feel silly to inspire you with as many ideas as possible, so you can create something amazing with what you have.

Below is a fun list of ingredients, organized by season, to give you some ideas!

more tips for the best burrata toast:

  • Tear the burrata: It looks gorgeous and carefree, and it ensures you don’t lose any of those tasty curds on the cutting board!
  • Buy more burrata than you think is necessary! It goes so fast, because it's so delicious. And if you have leftovers, I love to toss it in this juicy peach burrata salad with sweet cantaloupe and strawberries. You can't actually go wrong.
  • Substitutes: While this recipe is all about the burrata, you can swap in fresh mozzarella or even fresh ricotta in a pinch. 
  • Quality: Use high-quality olive oil, aged balsamic, and flaky salt for finishing these toasts. The flavor shines with the delicate burrata and you’ll notice the difference!

Ingredients

toast:

  • 4 ¾-inch thick slices artisan bread (sourdough, french)
  • 1 tbsp olive oil
  • kosher salt
  • freshly ground black pepper
  • 1 garlic clove, peeled
  • 1 4 oz ball fresh burrata, torn into 4 pieces

burrata avocado toast:

  • ¼ avocado, sliced
  • 1 tbsp torn fresh herbs (mint, dill, basil)
  • flaky salt
  • red chile flakes

burrata tomato toast:

  • 4 cherry tomatoes, quartered
  • 1 tbsp chopped pistachios
  • flaky salt
  • olive oil, for drizzling
  • aged balsamic, for drizzling
  • fresh basil, for garnish

burrata pesto toast:

  • 1 tbsp homemade pesto (or your favorite store-bought brand)
  • microgreens, for garnish

burrata prosciutto toast:

  • 1 slice prosciutto
  • hot honey, for drizzling
  • edible flowers, for garnish

Instructions

make the toast:

  1. Preheat oven to 375°F.
  2. Line a baking sheet with aluminum foil and arrange bread slices in an even layer. Brush both sides with olive oil and season with salt and pepper. Bake for 5- 8 minutes, or until bread is golden brown on the edges but still springy in the center.
  3. Rub each slice with a garlic clove and set aside to cool.

burrata avocado toast:

  1. Arrange a slice of burrata on a piece of toast and top with avocado.
  2. Sprinkle with herbs and a pinch of flaky salt and chili flakes.

burrata tomato toast:

  1. Arrange a slice of burrata on a piece of toast. Top with the tomatoes and sprinkle with pistachios and a pinch of flaky salt.
  2. Drizzle with olive oil and aged balsamic; garnish with basil leaves.

burrata pesto toast:

  1. Arrange a slice of burrata on a piece of toast. Spoon pesto on top and garnish with microgreens.

burrata prosciutto toast:

  1. Arrange a slice of burrata on a piece of toast and drape the prosciutto over top. Drizzle with hot honey and garnish with edible flowers.
