  • 1/2 recipe artisan pizza dough (one 15 oz dough ball)
  • 1 tbsp olive oil
  • 1/2 pear, cored and thinly sliced
  • 1/2 cup whole-milk ricotta
  • 1/2 cup grated pecorino romano
  • 2 tbsp shaved fresh black truffle, from 1/2 oz truffle (can substitute 2 tbsp truffle oil)
  • 1 tbsp honey
  • freshly ground black pepper


  1. Place pizza steel or stone in the oven and preheat to 500°F. Let steel heat up for a full 45 minutes.
