Ingredients

  • 8 oz fresh salmon fillets
  • kosher salt
  • freshly ground black pepper
  • 1/2 lemon, sliced
  • 6 tbsp unsalted butter, softened
  • 2 tbsp olive oil
  • 1 tbsp whole grain mustard
  • 1 tbsp fresh squeezed lemon juice
  • 1/4 cup minced fresh parsley
  • 4 oz hot smoked salmon
  • crackers and crudités, for serving

Instructions

  1. Use a fork to mash together butter and olive oil in a medium bowl until smooth and no lumps of butter remain. Whisk in mustard and lemon juice. Add 1/2 tsp kosher salt, black pepper and parsley and stir until combined. Discard skin from cooked salmon, then use a fork or your fingers to break the meat into small pieces. Repeat with the smoked salmon. Add all the salmon to the butter mixture and fold in until well combined and the fish is more finely shredded.

  2. Transfer to a glass jar or serving bowl. Cover and chill at least 1 hour and up to 5 days. Bring to room temperature before serving. Serve with crackers and crudités.
