Ingredients

  • 1 (15 oz) can unsweetened pumpkin puree
  • 2 whole milk
  • 2 cups heavy cream
  • 1 cinnamon stick, broken into pieces
  • 810 cloves
  • 1 3-inch piece ginger, sliced
  • 3/4 tsp kosher salt
  • 1/2 cup granulated sugar
  • 1/2 cup maple syrup
  • 6 large egg yolks
  • 1 tbsp vanilla extract
  • 1 tbsp bourbon (optional)

Instructions

  1. Combine pumpkin puree and salt in a large saucepan over medium heat. Cook, string constantly to prevent scorching, until reduced by half, about 20 minutes. You should have 1 cup of pumpkin puree.
