  • 1 3-inch piece ginger, peeled and roughly chopped
  • 6 egg yolks
  • 1/3 cup sugar, plus more for topping
  • 1/4 tsp kosher salt
  • 3/4 cup canned pumpkin
  • 1 1/2 tsp vanilla extract
