Chocolate meringue cookies are intense bites of dark chocolate. The texture is light and crispy;  the bitter cocoa flavor is big and it lingers, begging for a glass of milk!

Ingredients

  • 1/2 cup powdered sugar
  • 1/4 cup Dutch-processed cocoa powder
  • 4 egg whites, room temperature
  • 1/4 tsp cream of tartar
  • 1/8 tsp fine salt
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup finely chopped bittersweet chocolate

Instructions

  1. Preheat oven to 250°F. Line 2 baking sheets with parchment paper. Prep piping bag with a large star or circle tip, if using.
