HOW TO MAKE

– chicken stock – butter – shallot – risotto rice – white wine – lemon – parmesan – mascarpone – soft herbs

And cook rice in butter until translucent on the edges.

Ladle in small amounts at a time. Cook, stirring often, until rice is tender.

add hot stock

Along with butter, lemon zest, lemon juice and parmesan.
