  • 1 cup plain whole-milk yogurt
  • 1/2 English cucumber, peeled, seeded and finely grated
  • 2 tbsp olive oil
  • 1 lemon, zested and juiced (about 2 tbsp lemon juice)
  • 2 tbsp minced fresh mint
  • 2 tbsp minced fresh cilantro
  • Kosher salt
  • Freshly ground black pepper
