Ingredients

  • 2 lbs yukon gold potatoes, peeled and cut into 2” chunks
  • kosher salt
  • 6 tbsp salted butter, cubed, plus more for serving
  • 1/2 cup heavy cream, plus more if needed
  • 2 tbsp grated fresh black truffle (from about 1/2 oz truffle), plus more for serving
  • freshly ground black pepper

Instructions

  1. Place potatoes and 1 tablespoon kosher salt in a large pot. Fill with enough water to cover the potatoes by 1 inch. Bring to a boil, reduce to a gentle simmer and cook until potatoes are fork tender, 12- 15 minutes.
