Ingredients

  • 1 tbsp minced shallot
  • 1/4 cup white balsamic vinegar
  • 2 tbsp red wine vinegar
  • 1 tsp minced fresh rosemary
  • 1 tbsp honey
  • 2 tsp Dijon mustard
  • kosher salt
  • freshly ground black pepper, to taste
  • 1/2 cup extra-virgin olive oil
  • 2 stalks celery, thinly sliced
  • 1 1/2 cups cooked cannellini beans (or 1 15-oz can), rinsed
  • 1 1/2 cups cooked borlotti beans (or 1 15-oz can), rinsed
  • 1 1/2 cups cooked gigante beans (or 1 15-oz can butter beans), rinsed
  • 1/3 cup roasted hazelnuts, coarsely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1 head radicchio, cored and thinly sliced
