  • 1 tbsp lemon juice
  • 1/2 tsp Dijon mustard
  • 1 tbsp minced fresh dill
  • 2 tbsp extra-virgin olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 8 oz sushi-grade skinless, boneless salmon
  • 1/4 fennel bulb, thinly shaved
  • 3 castelvetrano olives, pitted and minced
  • flaky salt


  1. Combine lemon juice, mustard, dill, olive oil, kosher salt, and freshly ground pepper in a small bowl. Whisk until combined.
