Ingredients

  • 2 tbsp butter
  • 2 tbsp extra-virgin olive oil
  • 1 medium onion, finely diced
  • 1 large carrot, peeled and finely diced
  • 2 celery stalks, finely diced
  • 3/4 lb ground beef
  • 3/4 lb ground pork
  • kosher salt
  • freshly ground black pepper
  • 1 cup whole milk
  • 1 1/2 cups dry white wine
  • 1 28-oz can crushed tomatoes
  • 1 bay leaf
  • 1 lb pasta dough
  • all-purpose flour, for rolling
  • semolina flour, for dusting
  • 1/2 cup finely grated parmesan, plus more for serving

Instructions

  1. To make the bolognese, heat butter and olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook, stirring occasionally, until very soft but not browned, about 10 minutes.
