Ingredients

sweet potato kale salad

  • 2 small sweet potatoes, peeled and chopped into 1/2-inch pieces
  • 3 tbsp olive oil
  • kosher salt
  • freshly ground black pepper
  • 1 tsp minced fresh rosemary
  • 2 bunches kale, ribs discarded, leaves chopped into bite-sized pieces
  • 1/2 cup dried tart cherries
  • 3/4 cup red grapes, halved
  • 1/2 cup toasted chopped walnuts 

pancetta vinaigrette

  • 1/2 cup plus 1 tbsp extra-virgin olive oil, divided
  • 4 ounces pancetta, cut into 1/4-inch-thick cubes
  • 1/4 cup balsamic vinegar
  • 3/4 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp sugar

Instructions

  1. Preheat oven to 425°F. Line two baking sheets with foil and set aside.
