kale slaw with apples (crunchy and sweet!)

This kale slaw is made with thin ribbons of flat leaf kale, radicchio, purple cabbage, and crunchy apples. It’s tossed with a creamy lemon poppyseed dressing and salty sunflower seeds!

Ingredients

creamy poppyseed dressing

  • 2/3 cup mayonnaise
  • 1/3 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 tbsp apple cider vinegar
  • Zest of 1 lemon
  • 2 tsp poppy seeds
  • kosher salt
  • freshly ground black pepper

kale slaw

  • 1 bunch flat-leaf kale, stems removed and leaves sliced 1/4-inch thick
  • 1 small head radicchio, thinly sliced
  • 1/4 head purple cabbage, thinly sliced
  • 1 apple, cored and cut into thin matchsticks
  • 1/2 cup roasted salted sunflower seeds

Instructions

  1. Combine mayonnaise, cream, sugar, vinegar, lemon zest, poppy seeds, 1/2 teaspoon salt and 1/4 teaspoon black pepper in a large glass measuring cup.
  2. Whisk until smooth and creamy. Taste and add more salt, if needed. Chill until ready to use.

kale slaw

  1. Wash sliced kale in a salad spinner and spin dry.
  2. In a large bowl, toss together kale, radicchio, cabbage, apples and sunflower seeds.
  3. Pour half the dressing over slaw mixture and toss to coat. Taste and add more dressing, if desired.
