  • 1/4 cup champagne vinegar
  • 1 tbsp fresh-squeezed lime juice
  • 1 tbsp dijon mustard
  • 2 tbsp honey
  • 1/4 tsp dried tarragon
  • kosher salt
  • freshly ground black pepper
  • 3/4 cup extra virgin olive oil

  • 9 oz baby kale (can substitute chopped flat-leaf kale)
  • 1-pint strawberries, hulled and sliced
  • 1 tbsp olive oil
  • 8 oz halloumi cheese, cut into 1/2-inch thick slices
  • 2 avocados, sliced
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup fresh mint, torn
