garlicky gigante bean salad

This gigante bean salad is doused in an extra-garlicky dressing and tossed with bits of prosciutto, buttery green castelvetrano olives, provolone, and fresh parsley. The giant beans soak up all the garlicky goodness and keep you coming back for more!

Ingredients

  • 3 garlic cloves, minced
  • 1 1/2 tsp dried oregano
  • 2 tbsp white wine vinegar
  • pinch red chili flakes
  • Kosher salt
  • Freshly ground black pepper, to taste
  • 1/2 cup extra-virgin olive oil
  • 3 cups cooked gigante beans (from 1/2 lb dried)
  • 1/2 cup castelvetrano olives, roughly chopped
  • 3 oz thinly sliced prosciutto, chopped
  • 1/4 cup coarsely grated provolone
  • 1/4 cup finely chopped parsley

Instructions

  1. Combine garlic, oregano, vinegar, chili flakes, 3/4 teaspoon kosher salt, pepper, and olive oil in a large mixing bowl.
  2. Add beans, olives, prosciutto, provolone, and parsley.
  3. Toss gently to coat. Taste and add more salt, pepper, or chili flakes if needed. Serve right away or chill to marinate for up to 3 days.
