  • 1 head radicchio, finely shredded (can substitute 2 cups shredded red cabbage)
  • 12 oz frozen shelled edamame, cooked according to package instructions and cooled
  • 1/2 English cucumber, diced
  • 8 small radishes, diced
  • 2 spears celery, diced
  • 2 large carrots, grated
  • spicy cashew dressing
  • 1/2 cup roasted salted cashews, chopped


  1. Combine radicchio, edamame, cucumber, radishes, celery, and carrots in a large bowl.
