This is a deliciously creamy-crunchy cucumber avocado salad. We use a ton of  herbs, sumac and a big splash of vinegar to make the flavors pop!

  • 2 ripe avocados, chopped into 1/2-inch cubes
  • 2 tbsp red wine vinegar
  • 2 English cucumbers, seeded and chopped into 1/2-inch pieces
  • 1/4 cup minced fresh soft herbs (I love parsley and mint), plus more for garnish
  • 2 tbsp olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 tsp sumac
  • Flaky salt, for garnish


  1. Place avocado chunks in a large bowl and toss to coat in vinegar.
  2. Add cucumber, herbs, olive oil and 1/2 teaspoon salt, 1/2 teaspoon black pepper and sumac.
  3. Gently toss to combine. Taste and adjust seasoning, if needed.
  4. Transfer to a serving bowl and garnish with more fresh herbs and flaky salt.
