Ingredients

  • 1/4 white onion, roughly chopped
  • 3 medium tomatillos, husked and quartered
  • 1 small garlic clove, chopped
  • 2 serrano peppers, stemmed and roughly chopped (can substitute jalapeños)
  • kosher salt
  • 1 large avocado, roughly chopped
  • 1/4 cup chopped cilantro

Instructions

  1. Place onions in a strainer and rinse under cold water, tossing around, for about a minute. Shake off excess water and transfer to a food processor or blender.
  2. Add tomatillos, garlic, serranos, and 3/4 teaspoon salt. Pulse until mostly smooth and free of big chunks. Add avocado and cilantro and process until blended but a little chunky. Stir in a few tablespoons of water, if needed, to reach desired consistency. Season with more salt if needed.
