Smashed  Cucumber Salad

You Will Need: – Persian Cucumbers – Fresh Ginger – Garlic Clove – Fresh Cilantro – Green Onions – Soy Sauce – Rice Vinegar – Toasted Sesame Oil – Granulated Sugar

01. Smash cucumbers and roughly chop.

02. Toss with salt and chill for at least 1 hour.

03. Make dressing: combine ginger, garlic, sugar, rice vinegar, soy sauce, toasted sesame oil.

04. Drain cucumbers off liquid and toss with dressing. Stir in cilantro and green onions. Drizzle chili crisp over top.
