Ingredients

  • 2 tbsp finely diced red onion
  • 2 tbsp red wine vinegar
  • zest of 1 lemon
  • 1 tbsp freshly squeezed lemon juice
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1/3 cup olive oil
  • 1 celery stalk, thinly sliced
  • 3 cups cooked cannellini beans (or 2 15-oz cans), drained and rinsed
  • 2 tbsp chopped fresh dill
  • 1/4 cup chopped fresh parsley 
  • 2 (6-oz) cans oil-packed tuna

Instructions

  1. Combine red onion in a large bowl with vinegar. Let sit 5 minutes to soften.
