I'm always on the hunt for unique flavor combinations, so when I stumbled on this lavender bee's knees cocktail, I knew I had to give it a try. I absolutely love the sweet and calming aroma of lavender, and it's in perfect harmony when combined with the floral note of honey and vibrancy of lemon. Gin can be a tough liquor to pair with, but these floral notes soften the strong herbal profile for a beautifully smooth and balanced drink. Our neighbors grow lavender that seems to bloom endlessly, and luckily we were able to make this drink with fresh lavender. Most people don't have that luxury, so we also tried this with dried lavender and the flavor difference was negligible. This cocktail is delicate, fresh, and floral -- and absolutely perfect for a spring aperitif.

    lavender honey syrup

    • 1/4 cup honey
    • 1/8 cup hot water
    • 1 teaspoon lavender


    • 2 oz gin
    • 1 oz lavender honey syrup
    • 1 oz lemon juice
    • 1 teaspoon lavender

    1. Combine hot water with honey and stir until evenly mixed. Add lavender, stirring to combine. Let cool, approximately 30 minutes, then pour through a fine mesh strainer to remove lavender.

    for the cocktail

    1. Combine all ingredients in a shaker full of ice. Shake vigorously for 10 full seconds. Double strain into a cocktail glass and garnish with a lavender sprig.
