Chicken Milanese with a shatteringly crisp panko crust and a bright fennel herb salad. A fresh take on an Italian classic.
"Crunchy chicken" is a big hit in our house. The kids love the shattery panko crust and juicy slices of chicken breast. And while breading chicken cutlets isn't exactly my favorite kitchen task, cooking something everyone is excited to eat has started to outweigh just about every other preference. And they chant for this one.

For my husband and me, I dress it up with a bright lemony salad full of peppery arugula, fresh herbs, shaved fennel, and buttery Castelvetrano olives. I just love the contrast of crisp, golden chicken with the fresh, briny, zesty stuff on top.
I've also streamlined the timing over the years. I bread the chicken ahead of time (sometimes in the morning) and let it rest in the refrigerator while I whisk together the dressing and layer the salad ingredients in a large bowl. When the chicken comes off the stove, all that's left is a quick toss. It feels surprisingly effortless, but tastes like something you'd order at a modern Italian restaurant.
While traditional Milanese chicken is often made with fine breadcrumbs, I always reach for panko. The airy, delicate crunch is exactly what I want here, and it stays crisp even after the salad lands on top.
Sometimes we want to serve this with a sauce to drag the crunchy chicken through. The kids adore my red sauce (a la Marcella Hazan of course), while my husband and I can’t get enough of this spicy hot tomato oil. Leftover cutlets are also fantastic sliced over my marry me chicken pasta or alongside my garlicky gigante bean salad for lunch the next day.

How to Make Chicken Milanese

Recipe Tips
Pound the chicken evenly. Uniform ½-inch cutlets cook quickly and stay juicy while the crust gets perfectly crunchy.
Season every layer. Salt and pepper the flour, eggs, breadcrumbs, and the chicken itself. It makes a big difference in the finished flavor.
Let the breaded chicken rest. Even 20 to 30 minutes in the refrigerator helps the coating adhere and crisp beautifully in the pan.
Use panko instead of fine breadcrumbs. I've made Chicken Milanese both ways, and I always come back to panko. The crust is deliciously crunchy!
Don't toss the salad too early. Keep the dressing and greens together in the bowl, but wait until the chicken is almost finished cooking before tossing so the arugula and herbs stay fresh.
Go heavy on the herbs. I almost think of this as an herb salad with fennel rather than an arugula salad with herbs sprinkled on top. They make the whole dish taste brighter and more interesting.
Fry over medium heat. The oil should gently sizzle when the chicken goes in. Too hot and the crust browns before the chicken cooks through; too cool and it absorbs oil instead of crisping.
Drain briefly, then serve right away. Chicken Milanese is at its best while the crust is crunchy and crackly, not soggy.
