A crunchy celery salad with fennel, pecorino, salami, and herbs. Bright, salty, and surprisingly substantial.

Ingredients

  • 1 tbsp freshly-squeezed lemon juice
  • 1 tbsp white wine vinegar
  • 1/2 tsp kosher salt
  • Freshly ground black pepper
  • 1/4 cup extra-virgin olive oil, plus more for drizzling
  • 3 large celery stalks, trimmed, thinly sliced on the bias
  • 1 small fennel bulb, thinly sliced, 2 tbsp fronds reserved
  • 2 oz pecorino romano, coarsely grated
  • 2 oz sliced salami, jullienned
  • 1/4 cup chopped roasted almonds
  • 2 tbsp fresh mint
  • 2 tbsp fresh parsley

Instructions

  1. Combine lemon juice, vinegar, 1/2 teaspoon kosher salt, 1/2 teaspoon black pepper and olive oil in a large bowl and whisk together.
  2. Add celery, fennel, pecorino, salami, almonds, mint, parsley, and reserved fronds. Toss to coat. Taste and add more salt or pepper if needed.
  3. Transfer to a serving platter. Drizzle with more olive oil and serve.
